Korean Chinese cuisine

From Wikipedia, the free encyclopedia

Korean Chinese cuisine (Korean: 중화요리 Junghwa yori, hanja: 中華料理) is derived from traditional Chinese cuisine but has been influenced by local ingredients in Korea. Due to geographical proximity, most Korean-Chinese dishes are derived from Northern styles of Chinese cuisine such as Beijing and Shandong cuisine. However, some have regarded Korean Chinese cuisine as being more Korean than Chinese.

The cuisine developed in the port city of Incheon, where the majority of Korea's ethnic Chinese population historically lived. However, Chinese restaurants in Korea are unusual in that they are owned and run by Koreans, rather than ethnic Chinese.

The latter development came in part due to the assimilation of the ethnic Chinese in Korea into the Korean culture as well as due to their outward migration due to legal discrimination they were subject to, especially under the Park Chung-hee administration. Consequently, the most authentic Korean Chinese cuisine can be found in centers of overseas Korean communities in the East Coast of the United States such as Queens and Manhattan in New York City; Palisades Park, Fort Lee, New Jersey and Koreatown, Los Angeles, which has the largest Korean population outside of Korea.
In South Korea there is an aspect of this cuisine which is unusual, in that home delivery is the main means through which it is put in front of diners. As such Korean Chinese cuisine is analogous to pizza delivery in the US or Indian take-away in the UK, and every South Korean urban household is served by no fewer than two such establishments.[citation needed]

The cuisine also occupies the same economic position to the two a-fore mentioned analogues, in terms of relative pricing vis-a-vis other dining options. Expensive gourmet Chinese cuisine at upscale establishments dedicated to such is also popular in South Korea, but the cuisine served is mainland Chinese styles.

There are two primary Chinese menu items served in the majority of Korean Chinese restaurants in South Korea and elsewhere:
Jajangmyeon (Korean: 자장면, Chinese: 炸醬麵), steamed noodles served in a lightly flavoured black bean paste, distinctly different from the various types of zhajiang mian served in mainland China and Taiwan.
Jjamppong (Korean: 짬뽕, Chinese name: 炒碼麵), a spicy noodle soup flavoured with onions and chili oil. A form of jjamppong is also the local Chinese speciality in the Japanese port city of Nagasaki (see Chanpon). The noodles are made from wheat flour.
In addition, several other dishes are often served in Korean Chinese restaurants:
Tangsuyuk (Korean: 탕수육, Chinese: 糖醋肉), the Koreanized version of sweet and sour pork or orange chicken.[2] Unlike the Americanized Chinese dish of the same name, tangsuyuk can be made with either pork or beef. If the meat is replaced with shrimp, the dish is called tangsu saeu.

Kkanpunggi (Korean: 깐풍기, Chinese: 宫爆鸡), a type of fried chicken glazed in sweet and spicy sauce. It can be served with the
bone or boneless.

JUST One in Seoul: Choo Shin-soo hits 100th big league homer ( by Global Post )

SEOUL, Aug. 28 (Yonhap) -- Choo Shin-soo of the Cincinnati Reds belted his 100th career Major League Baseball (MLB) home run on Tuesday against the St. Louis Cardinals on the road.
Choo hit the milestone home run off St. Louis starter Joe Kelly in the fifth inning at Busch Stadium. It was his 17th long ball of this season.
His solo shot provided the only run for the Reds, as they lost to the Cardinals 6-1. Choo went 2-for-4 to raise his batting average to .278.
In his first season with the Reds, Choo has been one of the most productive outfielders and leadoff men in all of National League (NL). Before the game against the Cards, Choo ranked second in the NL in on-base percentage (.413) and walks (86), and was tied for second with two other players in runs scored (86).
The 31-year-old played his first MLB game with the Seattle Mariners in 2005 and was traded to the Cleveland Indians during the 2006 season. He didn't become a regular big leaguer until 2008.
A top pitching prospect in high school, Choo has been an outfielder throughout his big league career. After manning the right field and mostly batting third in the lineup for the Indians, Choo became the everyday center fielder and leadoff hitter for the Reds after joining the NL club in a trade last December.
Choo also had 16 stolen bases before Tuesday's game. He is on pace to post his third career "20-20" season, with at least 20 home runs and 20 steals.
For his career, Choo has 100 home runs and 101 steals in 826 games.
MLB.com lists 40 active players with at least 100 home runs and 100 steals in their careers, with Shane Victorino of the Boston Red Sox also joining the club on Tuesday by hitting his 100th and 101st homers against the Baltimore Orioles.
However, the website's list includes nine players who haven't appeared in a big league game this season, such as Johnny Damon, who last played with the Indians in 2012, and Ivan Rodriguez, whose last MLB game came with the Washington Nationals in 2011.
One of the players on the list, former All-Star Andruw Jones, is playing in Japan this year.
Choo is the second South Korean position player to play in the big leagues, after first baseman Choi Hee-seop. Choi spent four MLB seasons with the Chicago Cubs, the Florida (now Miami) Marlins and the Los Angeles Dodgers from 2002 to 2005, and had 40 home runs and 120 RBI with a .240 batting average in 363 games. Choi is now playing for the Kia Tigers in the Korea Baseball Organization (KBO).
Choo will become a free agent after this season and could command a lucrative, multi-year contract from a team seeking production from the outfield. He's making US$7.37 million this season.

JUST One in Seoul : Sopung Chadol 소풍 차돌 korean BBQ restaurant -Chadolbaki(Chadolbaegi, 차돌박이)

Sopung Chadol 소풍 차돌 Korean BBQ Restaurant

A simplistic sizzle of beef meat and fat, the perfect balance in each bite.

What is Chadolbaki(Chadolbaegi, 차돌박이) ?

Chadolbaki(Chadolbaegi, 차돌박이) is a thinly sliced beef brisket meal that is also popular at homes or at Korean restaurants.  The meat is not marinated whatsoever and it’s simply cooked on portable or built-in gas or charcoal grills.   The meat is usually fattier than other parts of the beef, yet it’s thin enough that each slice doesn’t contain too much fat.  And because of its thinness, each slice cooks very fast over open grills for quick bite after bites.  Cooked chadol baki can be dipped in a sauce made up of sesame oil, salt, and pepper and eaten together with shredded scallion salad (pa muchim).  Additionally, lettuce, spinach, or other leafy vegetable(s) can be used to wrap to all contents altogether along with a dab of dwenjang or ssamjang.

You can Enjoy at Home !!

To grill this beef brisket, you need one of those compact tabletop grills that uses the propane or electricity – they are not very expensive (about $50-$70) and it’s very handy to have one. This is because chadolbaegi is pretty thin and cooks quickly, and you want to grill it as you eat it.

  cold noodle (Naengmyeon)

From Wikipedia, the free encyclopedia

Naengmyeon
(Korean: 랭면 (North Korea), 냉면 (South Korea), also known as raengmyeon (in North Korea), naeng-myeon,naengmyun, or naeng-myun, meaning "cold noodles") is a Korean noodle dish of long and thin handmade noodles made from the flour and starch of various ingredients: buckwheat (메밀, memil), potatoes, sweet potatoes, 칡냉면, naengmyun made with the starch from arrowroot (darker color and chewier than buckwheat noodles), and kudzu (칡, chik). Varieties with ingredients such as seaweed and green tea are available. According to the 19th century documents of Dongguksesigi (동국세시기, 東國歲時記), it has been made since the Joseon Dynasty.[1]
Originally a delicacy in northern Korea, especially in the cities of Pyongyang (평양, 平壤) and Hamhung (함흥, 咸興) in North Korea, raengmyeon became widely popular throughout Korea after the Korean War.[1]

Naengmyeon is served in a large stainless bowl with a tangy iced broth, julienned cucumbers, slices of Korean pear, and either a boiled egg or slices of cold boiled beef or both. Spicy mustard sauce (or Mustard oil) and vinegar are often added before consumption. Traditionally, the long noodles would be eaten without cutting, as they symbolized longevity of life and good health, but servers at restaurants usually ask if the noodles should be cut prior to eating, and use scissors to cut the noodles.

Park Ji-Sung's first PSV appearance since his last spell at the club in 2005.

Aug 24 (Reuters) - Surprise packages PEC Zwolle kept up their 100 percent start to the Dutch season when Guyon Fernandez and Rochdi Achenteh scored in a 2-0 home triumph over Cambuur Leeuwarden on Saturday.

A fourth successive victory moved PEC two points clear at the top of the table while PSV Eindhoven's winning start was halted by a 1-1 draw at Heracles Almelo where Ji-Sung Park marked his return with an 86th-minute equaliser for the visitors.

Lerin Duarte netted after six minutes for Heracles and they also hit the woodwork twice.
South Korean international Park, recently signed from Queens Park Rangers, then came off the bench to score in his first PSV appearance since his last spell at the club in 2005.
PSV, whose starting lineup did not feature a single foreigner in a rarity for Dutch football, had won their first three matches of the season but rested several players with an eye on their Champions League playoff at AC Milan on Wednesday.

Roda JC Kerkrade are fifth after a 4-0 rout of ADO Den Haag while NEC Nijmegen, who fired coach Alex Pastoor last week, let a two-goal lead slip to draw 2-2 with RKC Waalwijk.
